Indulge in the creamy goodness of Broccoli Soup enriched with WAH-TOR™ Phycocyanin collagen builder. This comforting soup features blanched broccoli cooked with aromatic onions and garlic. Blended to a smooth consistency, it's simmered with coconut milk and a blend of spices, creating a nourishing and flavourful bowl. Garnish with blanched broccoli florets and savour the warmth!
Ingredients:
Water - 300 ml
Broccoli chopped into small florets - 100 gms
Salt to taste
Butter - ½ tbsp
Garlic finely chopped - 1 tsp
Onion chopped - 1 medium-sized
Whole wheat flour - ½ tbsp
Thick and fresh coconut milk - ½ cup
Pepper ½ - tsp
Oregano - ½ tsp
Phycocyanin - 1 scoop
Method:
1. Blanch broccoli in boiling water with salt for a minute and drain the florets.
2. In a pan add butter, and let it melt.
3. Add onion and garlic and saute until they cook soft.
4. Add the flour and stir well.
5. Add the blanched broccoli and water to the pan.
6. Simmer and cook for 8 to 10 minutes or more until the broccoli cooks.
7. Remove the pan, and let the mixture cool.
8. Blend the soup well in a blender.
9. Add the soup again to the saucepan, add coconut milk, and let it simmer for another 5 minutes on low heat.
10. Add salt, pepper, and oregano to the soup and turn off the stove.
11. Transfer the soup in a soup bowl, add phycocyanin, stir well.
12. Garnish it with few blanched broccoli florets and serve hot.
